Tuscan 'Peperonata' is another regional classic. Simple ingredients and simple preparation. Slowly braised yellow and red bell peppers with basil, tomato and extra virgin olive oil. Grilled thin slices of zucchini rolled with fresh ricotta and herbs filling. Tastes even better the next day, and it is great warm or chilled. The Peperonata is served as a side, appetizers and for sandwiches as well. The zucchini rolls are not just delicious and easy to prepare, they can be prepared before for large party's finger food.
