Grilled thin slices of zucchini rolled with fresh ricotta and herbs filling. Tastes even better the next day, and it is great warm or chilled. The Peperonata is served as a side, appetizers and for sandwiches as well. The zucchini rolls are not just delicious and easy to prepare, they can be prepared before for large party's finger food.
